Is there a differance between having assistants session dogs or doing it yourself manually (I think I spelled that wrong lol)

No difference at all

The stats (Obedience, Muscle, Coat) will go up the same no matter whether you use assistants or do it yourself.

Kennel assistants were brought into the game to help people out when they weren't able to log in every day due to holidays/work etc.
