Why is there so much difference in the Old Ratings system vs the New Ratings system?

If my source dogs have an SOP rating when born of say 6.50, the other SOP is maybe 32.1.

Why such a big difference? Which one would you go off of when breeding?

The new system is the true system that is currently used. The old system IS helpful though if you are breeding from source, as it shows you the more subtle differences between traits. Sometimes sometimes if people are source breeding, they will use the old system until they get their dogs to near 100 on that (around 50 in the new system). Then they will switch to the new system to continue breeding for current SOP.

Did you know?
Judges are generally certified to judge one or several breeds, usually in the same group, but a few "all-breed" judges have the training and experience to judge large numbers of breeds.
